Celebrate weekends with Keyaki kaiseki-style Bubbly Brunch presented in an okonomi concept, featuring a curated menu of 40 items, consisting of a selection of perennial Japanese culinary favourites and 20 new dishes specially created by Master Chef Hiroshi Ishii (石井博).
Okonomi is a customisable dining experience where guests are presented a menu of eight courses with five options per course by selecting their delicacy of choice from each course to best suit their tastes. The refreshed menu includes 20 new dishes such as Grilled Salmon with Soy Milk skin through a delicate preparation process where the rich proteins are retained in the skin of the soy milk. Keyaki’s signature dish, the Inaiwa Udon from Akita Prefecture is now available during the Bubbly Brunch as well.
The okonomi-style menu was crafted with balance in mind starting with lighter, chilled presentations such as Kobachi and Sashimi to slowly waken the palette, before proceeding to textured, hot dishes such as Yakimono and Teppanyaki. The savoury courses are rounded off with Shokuji dishes which are crafted to cleanse the palette, before concluding on a sweet note with a delightful choice of desserts.
To further heighten the luxurious experience, guests may choose from a curated list of five sparkling beverages, carefully selected to enhance the dishes created by Chef Ishii. The selection includes Laurent Perrier Brut NV Champagne; Sparkling Akazaru Shochu; Mio Sparkling Sake; Manzairaku Kaga Umeshu Soda; and Tiger Beer.
