Treat Dad to an indulgent spread of international delights this Father‘s Day at Edge, featuring Chef de Cuisine Ken Zheng’s unique creation of traditional Rickshaw Noodles with a contemporary twist. As a tribute to his father and grandfather, Chef Ken honoured their recipes by adapting them with his signature culinary touch using his specialty sauce. His grandfather’s heritage soup version is represented through his newly created dry handcrafted ban mian dish with simmered pork belly and sous vide egg, and served with the original classic pork and anchovy soup broth. Chef Ken picked up the art of making perfectly textured handmade noodles from his father who used to run a ban mian street stall.
Other highlights for the Father’s Day dinner and Sunday Brunch spread include Wagyu Short Rib Rendang, Tokusei Ikazushi (special stuffed Squid Sushi with Seasonal Vegetables), Bossam (Korean Simmered Pork Belly with Homemade Kimchi), complementing the extensive spread of seafood on Ice, fresh grills, carvings, and lip-smacking desserts.

Hai Tien Lo honours all Dads with two specially crafted set menus of oriental delicacies with culinary highlights such as Double-boiled Abalone and Sea Treasures with Matsutake Mushroom, Braised Classic Australian Whole Abalone with Sea Cucumber, and Grilled Rack of Lamb with Honey Pepper Sauce.
The well-loved Dim Sum Brunch Buffet is also available on Father’s Day weekend of 18 and 19 June 2016. Featuring more than 60 handcrafted dim sum and signature delicacies, the popular a la carte buffet includes Chef’s specialties of Sautéed Prawns and Fresh Clams in Chef’s Signature Homemade XO Chill Black Bean Sauce, Cantonese Sliced Barbecued Pork Belly, Chilled Boston Lobster with Fresh Fruit Salad, and Pan-fried Diced Beef with Black Pepper Sauce; and dim sum highlights such as Steamed Barbecued Pork Buns, Fragrant Fried Carrot Cake in Chef’s Signature Homemade XO Chilli Sauce, and Steamed Pork and Prawn Dumplings with Crab Roe.
In honour of the special occasion, all guests will receive a complimentary Longevity Bun and all fathers will get to take home a box of premium Chinese tea.
