Oscar’s – Endless Sunday Brunch, Conrad Centennial Singapore

After our little therapeutic “weekend getaway” at Lobby lounge ,We were back at Conrad and this time to feast our hearts out at the Endless Sunday Brunch.

Start brunch with oysters from across the globe, the chefs here have procured these aphrodisiac oysters from Australia, Canada, France, Ireland, and Scotland. We loved the different flavor profiles of the oysters paired with a drizzle of the special shallot vinegar which further enhances the mineral flavor from the oysters to create a lovely sweetness.


The Alaskan crabs were another delight that we loved. A true treasure of the sea, the soft delicious meat simply melted in our mouths.

Carbs are usually the things to avoid at a buffet but the Prawn noodles soup at Oscars is seriously very Siok! A deep prawn umami flavor permeates the soup and the noodles and fish cakes were satisfying. Just get a bowl of soup if you are a smaller eater. The other dish that we would recommend is the Laksa, the classic textbook dish is well-executed here and it pairs well with any of the seafood selection.


Pro tip: Get the the prawns fresh and crunchy from the cold seafood section and add them into the rich Laksa soup for a burst of flavor.

Every heard of a congee bar? You will find one at Oscar’s! On a rotation basis try interesting varities such as Singapore Laksa Congee and Lobster Congee. Be prepared to be spoiled for choice at the number of condiments from the humble braised nuts to salted vegetables but here is how to hack that simple bowl of congee.

Order up some freshly grilled seafood at the outdoor charcoal grill in the form of rock lobster marinated with a blend of Creole spice cooked to perfection and moreish garlicky jumbo clams. The chefs at the BBQ Grill section will cook up fresh lobsters and prime cuts of beef over charcoal and the good thing here is that diners don’t have line up. Simply deposit a clipper containing your table number and have your food delivered once ready.

For something more fancy head over to the live station and get unlimited pan-fried Foie Gras!  The silky texture of foie gras is complemented with a yuzu gel and slow roast fig. The sweetness of the roasted fig cut through the fattiness of the foie gras and the yuzu brought a nice tartness.

The cheese section is quite extensive with blue stilton, chaumes and emmental just to name a few. For the cheese lovers, you can pair them the unlimited premium wines.

Making a grand debut is the chef’s duck ragout crêpe finished with port wine berry jus. The deep flavor of the port wine berry jus went really well with the tender duck.

For those looking for a bit of kick, tickle your taste buds with the bold flavours and tantalising MALA spices! The new mala stir-fry live station allows you to choose from a selection of fresh ingredients before the chef cooks up the dish in accordance to your preference. Garnish with sesame seeds and peanuts for a crunchy finish.

Feeling the heat from the mala? try the interesting concoctions from the drinks station which are included in the buffet. We loved the thick Thai Ice Tea, Pu-er tea (in iced form), sugarcane juice and even a calamansi-infused tea. Selected fresh fruit shakes can also be ordered(but these are chargeable).

The one thing that you must do, is save stomach for deserts. The pastry chefs here are on another level. Each of the deserts are carefully crafted not just visually but also taste wise. Just look at the very detailed crafted little fishes here. Each of them are actually orange flavored white chocolate and designed to look like real fishes. The cakes and the many layered textures are gastronomic wonders.



In Summary

We cannot guarantee that you won’t go home a size larger but you can be assured of obtaining gastronomic nirvana at Oscar’s Endless Sunday buffet brunch. Each dish is crafted thoughtfully and the amount of attention given to each detail is monumental. The service standards of Conrad as an international brand shines as well, the service staff were extremely attentive and anticipated our needs without us asking. Such can be seen by the offering of coffee right after we sat down with a plate of dessert.
