SINGAPORE – From 1 to 31 March 2022, Peppermint brings back quintessential Peranakan fare through all-you-can-eat buffet, with selected creations enlivened by vegetables, herbs and spices grown and harvested from the Urban Farm.
Featuring dishes made from Chef de Cuisine Leon Yee’s collection of heritage recipes, the spread showcases more than 20 favourites, infused with the rich heritage, aromas and flavours of Straits Chinese cooking. Start your meal with mainstay dishes, including Ayam Buah Keluak (Chicken with fermented pangium edule seeds), Itek Sio (Braised duck leg with tamarind and coriander), and Tiger Prawn in Assam Nanas (Tiger prawns in pineapple and tamarind). The savoury Sustainable Barramundi Kuah Ladah features sustainably sourced barramundi fish, cooked in a rich traditional ‘kuah lada’ gravy, that has been enhanced with turmeric and peppercorn.
Other highlights include Black Angus Beef Oxtail Pongteh (Angus beef oxtail, stewed in fermented soy bean paste), and the popular Seafood Dry Laksa. Desserts such as the Pulut Tai Tai with House-made Kaya, and the decadent Kueh Lapis with Gula Melaka, alongside a selection of other Peranakan favourites, such as the signature Durian Pengat, Chendol Coconut Mousse Cake, and Ondeh Ondeh cake are available too.
