Renowned for its rarity, the Amakusa Wagyu beef is characterised by its fine marbling, tenderness and robust flavours due to the rich fertile land in the south west of Kumamoto Prefecture. With only a few hundred cows that are born and breed in the region of Amakusa, this is a rare opportunity to indulge in this delicacy that is prepared in different cooking methods to showcase the smooth and buttery flavours of this top-quality Wagyu beef.
Highlights from the menus include Steamed Thinly-sliced Wagyu Beef on Rice, whereby delicately-sliced Wagyu beef is layered on top of rice and cooked in a bamboo steamer, allowing the meat to maintain its tender texture while subtly infusing the rice with the rich flavour of the beef; perennial favourite Wagyu Sirloin Beef Teppanyaki, where Wagyu sirloin beef is cooked teppanyaki-style to your preferred doneness while retaining its flavour and tenderness with hints of smoky, slightly charred aroma; Seared Wagyu Beef Sushi served on bite-sized pillows of fragrant rice, and lightly seared to draw out the flavours and buttery texture of the meat; and Grilled Wagyu Beef Skewers with Miso, where the tender meat is grilled to perfection and topped with flavourful miso sauce.
