Peach Blossoms takes the lead with a collection of Chinese New Year set menus (from $138++ per person) specially designed by Executive Chinese Chef Edward Chong and his culinary team. Perfect for festive celebrations for up to groups of five, or an intimate dinner for two, every menu is exquisitely crafted for the occasion, and in Chef Edward’s signature style, you can be assured of a feast for all senses.
Highly recommended is the ‘Harvest’ set menu ($288++ per person, min. two to dine), a six-course dining experience which starts off with the refreshing Prosperity Geoduck Yu Sheng with Amaebi, Fish Roe and Organic Mixed Fruit, followed by a medley of auspicious ‘must-have’ dishes, including the deeply flavourful Double-boiled Cordycep Flower Soup with Crab Claw, Wild Mushroom, Sea Whelk, Conpoy and Imperial Fish Maw, meltingly tender Pacific Grouper ‘Lion Head’ Ball in Hokkaido Sea Urchin Crab Roe Collagen, served with Sakura Ebi Cracker, and a satisfying Hokkigai Royal Clam and Lobster in Jamon Iberico Ham, Ginger Scallions, served with Chawanmushi.
End your meal with ‘Lantern’ Puff Pastry, Double-boiled Bird’s Nest with Cream of Almond, Japanese Purple Sweet Potato, and Almond Slices, which symbolise the achievement of sweet success in the year ahead.
Peppermint (From 28 Jan to 15 Feb)
Make a reservation for the family at Peppermint and unleash your ‘inner tiger’ at the á la carte buffet during lunch (from $65++ per person) or dinner (from $88++ per person), from 28 January 2022. Feast on Chef de Cuisine Leon Yee’s celebratory highlights, such as Eight-Treasure Duck Leg, the ‘wok hei’-laced Wok-tossed Tiger Prawn with XO Sauce, and the 90-Days Aged Black Angus Beef Belly with Asian Barbecue Glaze.
Reunion Dinner Buffet is available on Chinese New Year’s Eve at $128++ per person, featuring Wild King Prawn with Butter and Egg Floss, Chinese Braised Beef Belly with Wawa Cabbage, and Japanese Sea Cucumber with Prawn Stuffing, alongside all-time favourites such as freshly shucked Oysters, Snow Crab, Boston Lobster, fresh Sashimi, and more!
